Peanut Butter Coconut Mango Smoothie
This is a delish + super filling + energizing smoothie recipe! I like to have this smoothie mid-afternoon when I need a boost of energy or when I crave something sweet.
Peanut Butter Coconut Mango Smoothie
(Makes 2)
1 1/2 cup of organic homemade cashew + almond milk
1/2 cup coconut cream
1/2 cup frozen mango
1/2 frozen banana
2 TBS peanut butter
Optional:
Add a dose of adaptogenic mushrooms such as Reishi (has been shown to support the body’s capacity to handle stress), Chaga (antioxidant properties, supports the immune system) or Cordyceps (hormone balancer, increase energy and endurance)
Blend at high speed (I use a Vitamix)
Tips:
- Use organic ingredients whenever possible
- Feel free to swap ingredients with whatever you have on hand like swapping mangos for peaches
- I like to blend cashew to almond to make my nut-milk because it cuts a bit of the almond taste which I often find overpowering
- Use re-usable straws; stainless steel or glass works great. This one was plastic but it’s a better investment to buy stainless steal or glass (I’m trying to avoid all things plastic…)
